Elana Amsterdam is back on The Food Schmooze.  Her book of recipes using high protein almond flour in place of white flour was a hit with us and our regular Food Schmooze listeners. So we invited Elana to join us again to talk about some of her recipe ideas.

We'll tell you all about why blanched almond flour is considered a superfood by some; how it differs from white wheat flour and how it registers on the glycemic index.

The cookbook in question is called Forking Fantastic.  Obviously you've got to be a little polite on the cover to get it into bookstores.  Also, obscenities in a cookbook, this is a growth opportunity for book burners everywhere.

The film examines the struggles and joys these five women face as prisoners and mothers. It shows the normal frustrations of parenting as well as the surreal experiences of a child's first birthday party inside prison, the cell that child lives in with her mother, and the biggest celebration of the year, Mother's Day in prison!

Italian Sausage Pitas with Feta and Watercress

serves 4

1/2 red onion, very thinly sliced  

1 tablespoon red wine vinegar

6 pieces italian sausage (hot or sweet)

1 bunch watercress, tough stems removed

5 oz feta cheese, crumbled

2 tablespoons mint leaves, torn

2 tablespoons olive oil

4 pitas with pocket

Combine the sliced onions and red wine vinegar in a large bowl. Set aside to marinate for 15 minutes while you prepare the remaining ingredients.
