Food Schmooze: The Winning Martini And Watermelon Salad With Feta And Mint

Bloodless Mary 
 
House made Vegetable Vodka Infusion
(All vegetables preferably local for ultimate flavor)
3 bottles of Crop Organic Vodka
2 cucumbers
4 large carrots
1 head of celery
1 pound of tomatoes
15-20 pepperoncinis

Tomato Water
5 lbs ripe tomatoes
5 T horse radish
5 T black pepper
5 T grain mustard
5 T celery salt
2 T kosher salt
Lightly process tomatoes with salt mix with remaining ingredients and place all in cheese cloth. Suspend over a deep container and let drain for 6-8 hours.

Place 1.5 oz vegetable vodka with 3 oz tomato water in a bar shaker with ice, shake well and strain into a chilled martini glass. Garnish with a candied tomato. 
 

Watermelon Salad with Feta and Mint

1/3 cup extra-virgin olive oil

3 tablespoons fresh lemon juice

2 teaspoons kosher salt

1 teaspoon Tabasco

1/2 teaspoon freshly ground pepper

One 8-pound seedless watermelon, scooped into balls with a melon baller or cut into 1 1/2-inch chunks (10 cups), chilled.

1/2 pound feta cheese, crumbled (2 cups)

1 1/4 cups pitted kalamata olives, coarsely chopped (optional)

1 small sweet onion, cut into 1/2-inch dice

1 cup coarsely chopped mint leaves

In a large bowl, whisk the oil, lemon juice, salt, Tabasco and pepper. Add the watermelon, feta, olives and onion and toss gently. Garnish with the mint and serve.
